Quinoa Chicken Parmesan

I love chicken Parmesan, and quinoa is a much healthier grain than bread crumbs (it is gluten-free and high in protein). When cooking quinoa, if you heat it up in your saucepan with a little bit of olive oil before adding water, it turns into a crispy amazing treat that will blow your mind (especially in this fantastic recipe).

This recipe had been on my list to try for a long time…but when I finally made it, it was love at first taste, I love it garnished with freshly chopped basil.
