Hummus Green Pepper & Tomato Salad with Feta.

This lunch is easy, healthy, cheap, and crazy delicious. Also, it’s packed with protein to keep you from hitting that late after-noon slump that makes it hard not to give up being productive in favor of repeatedly checking the time, only to realize less time has passed since your lest time-check than seems humanly possible…Anyway, I was inspired to make this recipe after realizing I had chopped more green pepper than I needed for Julia Child’s ratatouille. I had a Tupperware container of chopped green pepper, and some mini-tomatoes I needed to use, also-I am a straight up hummus junkie.


  • 1 C. Green Peppers
  • 3/4 C. Cherry Tomatoes
  • 1/3 C. Garlic Roasted Sabra Hummus (this brand is the greatestttt)
  • 1/3 C. Feta Cheese

Step 1: mix tomatoes, green peppers, and feta together in Tupperware container.

Step 2: add Hummus, stir well.

Step 3: close container, refrigerate until morning to bring to work.
