Baked Avocado Egg w/ Lemon


Baking an egg in an avocado is a simple clean-eating go-to breakfast. It contains healthy fats that give it it’s rich creaminess, and bonus: it will give you enough energy to seem like a morning person.

Here is all you will need for 2 servings:

  • A ripe avocado
  • Two Eggs
  • One Lemon (may use store-bought lemon juice in a pinch)
  • Optional: Banana (see step 1)

Step 1: Selecting a ripe avocado is a step in itself. When I started cooking, all the instructions I could find on selecting the right avocado were useless. Even today I have yet to find a fully ripe avocado in the store (maybe it is a Grand Rapids thing). The best advice I on getting a good avocado came from the podcast Stuff You Should Know, which is to store unripe avocado’s in a paper bag with a banana or two. Now I don’t worry about finding a perfectly ripe avocado at the store-I just look for the darkest green/softest one I can find and store it next to a banana.

Step 2: preheat oven to 400 degrees

Step 3: Cut avocado in half long-wise, and pull apart. Remove pit.

Step 4: Crack an egg into each half of your avocado. If you only want to make one serving, keep the other half fresh by storing with some white onion (source).

Step 5: Bake avocado with egg inside until egg is done (about 15-20 mins).

Step 6: Remove from oven, and squeeze the juice of the lemon on top.
