Kale and Banana Smoothie

This is another from the Buzzfeed Clean Eating Challenge (link). If you are just getting started with healthy eating, or you had a particularly unhealthy weekend and are looking to get back on track, this is the perfect recipe to turn things around (and feel like a total saint for drinking a smoothing made with green vegetables). I’ll admit, its not as tasty as a muffin from Starbucks, or a smoked salmon cream cheese bagel, but it’s not half bad and it will make you feel great (emotionally and physically) on a morning where you really need to get on track with your health choices.

Ingredients:

  • Kale leaves from 1/2 a bunch (roughly 3 cups)
  • 1 Large ripe banana, peeled, than frozen (put in freezer the night before)
  • 1 C. Unsweetened almond milk
  • 1 Tbsp Almond butter
  • 1/4 tsp Vanilla extract

Step 1: cut banana into 1 inch chucks (on mornings I make this, I leave my frozen banana out on my cutting board to thaw while I shower).

Step 2: add all ingredients to blender and puree on high speed until blended.

Optional: add a few teaspoons of honey. On it’s own, this smoothie should make you feel like a saint among saints, but if you prefer to add a few drops of honey, you should definitely still congratulate yourself for being a saint (even with honey, this breakfast is relatively low sugar, fits within clean eating and guidelines, is packed with vitamins and minerals, and is low in calories).
