I love pizza. The other week I asked Gabe if cauliflower crust pizza sounded good for dinner and he said “I’m getting kind of sick of pizza Hun.” ….Blasphemy. I fully plan on continuing eating pizza (in some form) every week. Zucchini pizzas are delicious, easy, and healthy (they’re also a great way to cultivate a love for vegetables).
- Tomato Sauce
- Tiny Meat Pieces of Choice
Step 1: Grease or spray a baking pan and preheat oven to 350 degrees.
Step 2: Cut zucchini either: lengthwise, cutting into the zucchini to form a boat, OR width-wise into smaller medallions.
Step 3: Top zucchini pieces with tomato sauce, cheese, and meat topping(s).
Step 4: Bake for 15-20 minutes until cheese is fully melted and zucchini is soft throughout. Easy Peasy.
